On Labor Day weekend, 2009, we opened our virtual doors for business. Our goal was simple - to provide home bakers everywhere with the ingredients, supplies and equipment they couldn't find elsewhere at affordable prices. Our selection isn't vast: you won't find bagel guillotines, novelty cookie cutters or gimmicky shortcut additives that claim to turn your breads from ordinary to "artisan." What you will find is an assortment of professional flours that is unparalleled anywhere, heavy-duty baking stones that won't crack at the slightest bump, authentic old-school bagel boards, and ingredients - including fresh compressed yeast - to help you create breads, pastries, cakes and cookies that any baker, amateur or pro, would be proud of.
And our search for new and better products continues. For example:
- General Mills' Neapolitan Type 00 Pizza Flour, which combines the elasticity of Caputo 00 and the extensibility of Pivetti Mimosa to produce flavorful thin crust pizza at a great price.
- After years of searching, we finally found an unbleached first clear flour in ConAgra's ISIS, which is also enriched and malted to meet the needs of craft bakers everywhere.
- Ozeri's Professional Zenith Scale, which offers superb design, SUS304 Stainless Steel construction, and a host of features that make it a delight to use.
We're especially proud of proprietary blends, which bring you flours that look, perform and taste like fine European flours. To that end, we've introduced our Euro-Style Artisan Flour, which behaves a lot like French Type 55 flour; Farine de Campagne, a medium-strong French-style bread flour with a touch of rye; Farine Rustique, a blend of wheat, rye and barley that recalls the rural millers' blends of old, and our NYB Craft Flours Type 65, Type 85 and Type 550, which bear a close resemblance to their French and German namesakes.
We've also innovated in other ways. Our NYB FlourPantries offer preselected assortments of our regular flours built around a particular theme, so that bakers interested in experimenting with variations can do so easily and conveniently - and at a price that's lower than they'd have to pay for the individual flours.
