Introducing Two New NYB Craft Flours

Now for a bit of background:
One of the great pleasures of operating a business like NYB is that we get to play with lots of different flours, including many that, for one reason or another, never make it onto our virtual shelves.
Recently, we were fortunate enough to be up in the Bay Area and stopped in to Central Milling's distributor to pick up some of their Type 65 Artisan Bakers Craft Flour, as well as their Type 85 Craft Flour, both of which have gotten rave reviews from everyone who's tried them. Unfortunately, we're not in the position, either geographically or in terms of sales volume, to carry them on a regular basis, so we started experimenting.
What we came up with is two flours that not only behave very much like those great Central Milling flours, but in both behavior and composition also are comparable with imported French organic T55 and T85 flours we obtained not too long ago. Because they do exactly what they're supposed to, we decided to add them to our lineup of Euro and Euro-style flours.
